Ingredients:
1 lb scallops, fresh or frozen, rinsed and pat dry
1 lb shrimp, fresh or frozen, deveined and peeled
1 cup freshly squeezed lime juice
1/4 cup freshly squeezed lemon juice
1 cup yellow onion, finely chopped
1/4 cup cilantro, finely chopped
2 jalapeño peppers, seeded and minced
Salt and pepper to taste
Instructions:
Cut the scallops and shrimp into small bite-sized pieces and place them in a large glass or ceramic bowl.
Pour the lime juice and lemon juice over the seafood and stir gently to make sure everything is coated. Cover the bowl with plastic wrap and refrigerate for 30-45 minutes, or until the seafood is opaque and has a firm texture.
While the seafood is marinating, finely chop the yellow onion, cilantro, and jalapeño peppers.
When the seafood is ready, drain off most of the lime and lemon juice, leaving just enough to keep the seafood moist.
Add the chopped yellow onion, cilantro, and jalapeño peppers to the bowl and stir to combine. Season with salt and pepper to taste.
Cover the bowl again and refrigerate for another 30 minutes to allow the flavors to meld together.
Taste and adjust seasoning as needed, adding more salt, pepper, or jalapeño peppers if desired.
Serve the ceviche cold, garnished with avocado, corn, or cucumber if desired.
